It’s a dish that smiles back with it sweet corn and tang of red wine vinegar.  A beautiful side just in time to end the hot summer months and  welcome fall.  A perfect dish to whip together for those extra mouths and the last BBQ fling of the season.  You’re gonna love it!


Tomato and Sweet Corn Salad


2 packages of fresh corn kernels

2 cups ripe cherry tomatoes, halved

1 cup of mozzarella balls; quartered

1/4 cup very small-diced red onion

1 tbsp. red wine vinegar

1 tbsp. olive oil

salt & freshly ground black pepper to taste

½ tablespoon of parsley

½ tablespoon of dill

1/2 cup thinly sliced fresh basil leaves




  1. Thaw out two packages of very sweet corn kernels. Add the corn to a large bowl with the tomatoes, mozzarella, red onion, vinegar, and olive oil. Sprinkle your parsley, dill with a good amount of salt and pepper, to taste.
  2. Just before serving, toss in the fresh basil. Serve cold or at room temperature.
