Avocados are rich in the antioxidant glutathione, which attacks free radicals in the body. They’re also an excellent source of potassium and beta-carotene. Pair them with this papaya dressing for a refreshing salad.
For the salad:
1 large ripe avocado, sliced into 12 pieces
Juice of half a lime
7 oz bag of fresh arugula, washed
1 scallion sliced thin
Slice the avocado and sprinkle with the lime juice to keep from browning.
Place a handful of arugula on a plate, sprinkle with the sliced scallions, arrange three slices of avocado on top. Dress the salad with the papaya dressing.
For the papaya dressing:
1 ripe papaya peeled, seeded and diced
Juice of 1 lime
4 Tbs walnut oil
2 Tbs rices ins vinegar
Salt and pepper to taste
Combine all ingredients in a food processor. Process until smooth.
Refrigerate covered, up to one week.
