Carrots are one of the top carriers for Beta-carotene. This nutrient has long been touted to have cancer fighting elements, and rightly so! Our bodies convert beta-carotene into vitamin A, which is responsible for boosting our immune functions, vision, reproduction, and cellular communication. This Carotene-Kickin’ Carrot Salad is an easy way to dress up this often overlooked (and overcooked) vegetable.

CAROTENE-KICKIN’ CARROT SALAD
Ingredients:
4-6 large carrot, julienned on a mandolin. Or a 16 oz. package shredded carrots
¼ bunch of parsley chopped
¼ small red onion finely chopped
Juice of one lime
1T sesame oil
2 tsp toasted sesame seeds
Salt and pepper to taste
Method:
Combine the shredded carrot, parsley and onion in a bowl. Whisk together the lime juice, sesame oil, salt and pepper. Toss the carrot mixture with the dressing to coat. Refrigerate for 10 minutes to set the flavors. Sprinkle the salad with the toasted sesame seeds and enjoy!
