Pimento Cheese Bacon Canapé

Easy appetizer to have on hand for last minute entertaining.

4 oz cream cheese, room temperature

1/2 c. mayo

1 cup sharp cheddar cheese

1 cup Monterey jack cheese

1/2 c. bacon, cooked and diced

3 T. pimento, diced

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp cayenne pepper

Phyllo cups (frozen section of supermarket)

Preheat oven to 350 degrees. In a food processor add the cream cheese and mayo; pulse a few times to combine.  Add the shredded cheeses and seasoning and blend well.  Put in a medium bowl stir in the chopped bacon and pimento, then refrigerate.  Place the phyllo cups on a baking sheet, lined with parchment paper; fill 3/4 full with cheese mixture.  Bake on center rack for about 5 – 7 minutes, till melted.  Enjoy!
