I’ll admit it—until recently, I had never made meringue cookies before. Something about whipping egg whites to stiff peaks always seemed a little intimidating. But my mom wanted to make these, so we decided to give it a try. What started as a simple baking experiment quickly turned into one of the most joyful afternoons I’ve had in a while. There’s something really special about slowing down and sharing a kitchen—especially with someone who taught you the basics of baking in the first place.
The result? These Chocolate Chip and Pecan Meringue Cookies are unbelievably good. Light and crispy on the outside, soft and slightly chewy in the center, and just the right balance of sweet and nutty. And the joy of waking up and They practically melt in your mouth! Plus, they look as elegant as they taste, with a beautiful shine and those signature little cracks that say, “I was made with love.”
If you’ve never tried making meringue cookies before, don’t be intimidated—this recipe is straightforward and surprisingly fun. And if you can share the experience with someone you love, even better.
Trust me: these cookies are going straight into our “family favorites” recipe box.

Chocolate Chip & Pecan Meringue Cookies
Ingredients:
- 3 large egg whites (room temperature)
- 1/4 tsp cream of tartar
- 1/8 tsp salt
- 3/4 cup granulated sugar (superfine works best)
- 1 tsp vanilla extract
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup chopped pecans (toasted for extra flavor, optional)
Instructions:
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- Whip egg whites: In a clean, dry bowl, beat the egg whites on medium speed until foamy. Add cream of tartar and salt. Continue beating until soft peaks form.
- Add sugar slowly: Increase the speed to high, and gradually add sugar (about 1 tbsp at a time), beating until stiff, glossy peaks form. This takes about 5–15 minutes. If you have issues (I did the first time), add cornstarch pinch by pinch.
- Add vanilla and beat briefly to incorporate.
- Fold in chocolate chips and pecans gently using a spatula—don’t deflate the meringue!
- Spoon or pipe dollops of meringue (about 1 tbsp size) onto prepared baking sheets, spacing about 1 inch apart.
- Put the cookies into the oven, then turn off the oven. Let the cookies sit overnight in the oven.
- Store in an airtight container at room temperature. They stay crisp for 2–3 days.
