Summer may be over, but let’s be real—Mexican taco nights are an all-year thing!  When I showed up at my best gal, Chelsea’s place for our Ladies Night, she greeted me with the most incredible “Welcome” drink, and let me tell you, the bar is set HIGH for all future party hosts.

This Spiked Frozen Coconut Lemonade (originally from Queen Jillian Harris) is creamy, refreshing, and just the right amount of sweet—it’s like a little slice of tropical heaven, perfect for any season. We spent the night devouring tacos, shamelessly sipping on cocktails and wine, laughing until we cried, and staying up until 4 AM reminiscing about everything around the sun.

So if you want to kick off your next gathering with something unforgettable, trust me—this is the drink! Think Italian Chi Chi vibes (a Piña Colada without the rum), lemon with sweet coconut, creamy, and oh-so-refreshing. It’s the perfect way to start the night (or day)… who’s to say?

Recipe
(Pro tip: Skip the booze for a delicious mocktail version!)

INGREDIENTS:

• 1 can frozen lemonade
• 2 cups ice
• 1 can coconut cream
• 1.5 oz Malibu Rum
• 3 oz Limoncello

DIRECTIONS:

• Start by adding one can of frozen lemonade into your blender
• Next, add two cups of ice
• Add one can of coconut cream to the blender
• Now it’s time to blend it up!

You can enjoy the lemonade as is, or keep reading for the spiked version:

• Blend it again until it reaches your desired consistency

Cheers to ladies’ nights with tacos and keeping the summer spirit alive all year long!
