There’s something magical about the kitchen when it’s filled with the sounds of sizzling oil, shared stories, and uncontrollable laughter. That was the scene not long ago when I found myself cooking side-by-side with my mom—aprons on, barefoot, and laughing like two kids at summer camp. What started as a casual craving turned into a spontaneous little kitchen adventure, and the result? These golden, crispy Crab and Corn Fritters.
Packed with sweet corn, tender crab, and just the right amount of spice, these fritters are pure comfort with a coastal twist. Perfect as an appetizer, a brunch centerpiece, or even a light summer dinner, they’re simple to make but feel like a special treat—especially when shared with someone you love.
So pull up a chair, pour something chilled, and let’s get to the recipe that turned a regular afternoon into one of those moments I’ll always remember.

Ingredients
Makes about 12 fritters | Prep: 15 minutes | Cook: 10–12 minutes
- 1 1/3 fresh corn kernels (from about 3 large ears)
- 16 oz lump crab meat (drained and shell-free)
- 1 Tbs butter
- 1 small onion finely chopped
- 1 cup gluten free all purpose flour
- 1/4 cup chopped fresh parsley or cilantro
- 1/2 tsp crushed red pepper flakes (adjust to taste)
- 2 large eggs
- 1/2 tsp baking powder
- Salt and black pepper to taste
- Juice of half a lemon
- Oil for frying (vegetable, canola, or light olive oil)
Optional Dipping Sauce
Whisk together:
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp Siracha
Instructions
1. Combine the Base:
In a large bowl, mix together corn, crab, onion, herbs, and red pepper flakes.
2. Make the Batter:
In a separate bowl, whisk the eggs, lemon juice, flour, baking powder, salt,
and pepper until smooth. Add to the crab mixture and stir gently to combine.
3. Heat the Oil:
Add about 1/4 inch of oil to a large skillet over medium heat. When a drop of batter sizzles, it’s ready.
4. Fry the Fritters:
Drop spoonfuls of the batter (about 2 tablespoons each) into the hot oil. Flatten slightly and fry for 2–3 minutes per side until golden and crispy. Don’t overcrowd the pan—cook in batches.
5. Drain and Serve:
Place cooked fritters on a paper towel-lined plate. Serve warm, with dipping sauce or a wedge of lemon.
Tips & Serving Ideas
- Serve on a bed of greens with a drizzle of lemon vinaigrette for a light lunch.
- Make them mini-sized for bite-sized appetizers at summer gatherings.
- Leftovers? Reheat in a toaster oven to keep them crispy.
These fritters are more than just a recipe—they’re a memory. I hope they bring a little laughter and love into your kitchen, just like they did in mine.
