I saw this dish on Instagram and I just had to recreate it for myself. These crispy mashed potato balls are a delightful twist on the classic comfort food, transforming creamy mashed potatoes into a golden, crunchy treat. These bite-sized morsels are perfect for appetizers, snacks, or a side dish. Made by combining day-old, cold mashed potatoes with a blend of cheese, herbs, and seasonings, they’re rolled into balls, coated in breadcrumbs, and fried to perfection. The result is a combination of a crispy exterior and a soft, flavorful interior that will leave you craving more. (And believe me, we ate on them for several days. Whether you’re hosting a party or simply indulging in a cozy night in, crispy mashed potato balls are sure to be a hit.

Crispy Mashed Potato Balls
Ingredients
1 ½ cups leftover cold mashed potatoes
½ cup Sargento sharp cheddar cheese
¼ tsp garlic powder
11/2 chopped chives (plus more for garnish)
⅛ tsp salt and pepper
⅓ cup flour (I use gluten-free and it worked just fine)
1 large egg
¾ cup GF panko
Avocado oil (for frying)
Note: Optional Ranch dressing for dipping
Instructions
In a bowl, combine cold leftover mashed with cheddar, chopped chives, salt/pepper and garlic powder.
Using a cookie scoop, scoop mixture into small balls.
Roll each scooped portion into balls.
Place flour, egg, and panko each in their own shallow bowl. Whisk the egg until the white and yolk are well combined.
Dredge each mashed potato ball in flour, then in beaten egg, then panko.
In a dutch oven, heat your frying oil to 375℉.
Use a slotted metal spoon to carefully add in the mashed potato balls to the hot oil, frying just 3-4 at a time.
Lightly stir the balls in the beginning to prevent sticking.
Fry each batch for 2-3 minutes or until they are fully brown, crispy and cheese is gooey inside. Use the slotted spoon to remove from the oil and place on a baking sheet to drain.
Place the balls into a 200-degree oven while you wait for dinner or party to begin and serve immediately. Dipping sauces on the side are delightful with this recipe.
Enjoy while hot and crispy with sour cream (or your favorite dip) for dunking!
