Addictive.  Addictive.  Addictive.  This FANTASTIC salad  is made with fresh, seasonal fruit drizzled with a mouthwatering poppyseed cream and topped with coconut and toasted almonds.  There won’t be any leftovers with this perfect match of flavors.  AND, it’s an absolutely stunning visual on your table.  Yep, you’re gonna love it!

Fresh Fruit Salad with Poppyseed Crema

Ingredients

2 Kiwi fruit, sliced
1 mandarin orange peeled and separated
2 cups of fresh blueberries
1 lb. strawberries, quartered
2 cups fresh pineapple, cut into chunks
2 cups raspberries

Poppyseed Crema

4 oz. sweetened condensed milk
2 cups sour cream, regular or low fat
1 tablespoon vanilla extract}
2 tablespoons of poppyseeds
1/8 tablespoon of almond extract

Garnish:

3/4 cup coconut, toasted
1 cup sliced almonds, toasted
Spring of mint.

Cut up all the fruit and combine in a large bowl.  In a separate bowl blend the sour cream with the sweetened condensed milk, vanilla and almond extracts, and poppyseeds.

Prepare this in one large bowl then add the fruit to the bowl and spoon the crème sauce over the fruit just before service.  Garnish with coconut and almonds.  Add a spring of mint to the top.  Enjoy!
