With Heart Healthy Month around the corner, leave it to Unconditionally Her’s own Tammy Sandlin to come up with one of the most delish and healthy soups for the winter season. No cream here, people. Just all flavors and one dish. Give this butternut squash soup a try and if ya like it, let us know! Happy heart (and hearty) healthy everyone!
Ingredients
1 butternut squash peeled and cut into cubes
1 large sweet potato peeled and diced
2 large carrots peeled and diced
32 oz vegetable stock (depending on how thick you like it) you can use more if you need
1 cup onion diced
1 cup apple peeled, diced
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cinnamon
1/4 tsp clove
2 tbsp honey
Directions
Add onions with a little avocado oil. Sauté. The add all ingredients to a large pot, or dutch oven.
Bring to a boil and simmer for 15 minutes, or until the squash is tender.
Using an immersion blender, puree the soup.
Taste for seasoning, and adjust if necessary.
