I have made this recipe for years and still enjoy it! It’s the perfect make-ahead snack for any unexpected guests or to have for lunch with some fruit or bowl of soup. The pinwheels can be made and stored in the refrigerator for up to three days, maybe more (I have always finished them or served them within three days, but they could stay fresh longer). The craisins make them colorful and festive. If you do not have thinly sliced turkey or are using left-over turkey from Thanksgiving, you can shred the turkey with a food processor or chop the bigger pieces into chunks for another variation of this recipe. Make a healthier version of this recipe with whole-wheat tortillas and reduced fat cream cheese.

Festive Turkey Pinwheels
8 Flour Tortillas (use whole wheat tortillas as a healthier option)
2 8oz packages cream cheese, softened (can use reduced fat if desired)
1 tbsp + 1 tsp horseradish (add more to taste)
1 1/2 tbsp milk
1/2 tsp black pepper
1 cup green onions, chopped
3/4 cup craisins
1/3 cup walnuts, chopped
32 slices of thin-sliced turkey (or finely chop your Thanksgiving turkey leftovers)
Plastic wrap
Directions:
- Mix cream cheese, horseradish, milk and black pepper, onions, craisins, and walnuts until all ingredients are incorporated. Add more horseradish if you like.
- Gently spread about 4 tbsp of cream cheese mixture onto flattened tortilla as close to edges as you can being careful not to tear tortilla. 3. Arrange slices of turkey on top of cream cheese.
- Gently roll the tortilla up, like a burrito. Wrap tightly in saran wrap. Repeat with remaining ingredients. Refrigerate for at least 2 hours. Slice and serve!
