Lemon Poppyseed Chicken Casserole

4 Cups Rotisserie chicken deboned
1c cooked rice
1c cup light sour cream
1/2  to 1 cup of milk
1 can cream of chicken soup
1/2 tsp onion powder
2 tsp poppy seeds
1 tsp salt
1/2 tsp ground pepper
1/2 tsp garlic powder
 Juice of half a lemon
 2 cups of shredded cheddar cheese
1 sleeve of butter crackers (like Ritz) crushed
 3/4 cup butter melted
 1/2 T of parsley


Preheat oven to 375.  Mix all ingredients except the cheese and crackers. Place in a 9 by 9 baking dish. Sprinkle the cheese on top Mix melted butter with crackers and sprinkle on top. Cook at 375 for about 30-40 minutes or until bubbly.

Garnish with parsley and serve hot.
