Everyone loves a delicious treat at the holidays, but those with special dietary needs, at times it’s challenging. Unconditionally Her’s Tammy Sandlin has a solution with her amazing dairy and gluten free Apple Tart that doesn’t sacrifice on taste – and adds a delightful twist on ingredients that everyone can enjoy.
Mini Apple Tarts

Crust
2 1/4 cup almond flour 1 tsp cinnamon
1 tsp baking powder 3/4 tsp salt
1 egg
3 tablespoons honey
2 tablespoons melted coconut oil
Filling
2 apples, diced small (one sweet and one tart) 2 tbsp coconut sugar
1/2 tsp pumpkin pie spice
Instructions:
Preheat oven to 325F. Prepare mini muffin tin by greasing.
In a large bowl, combine and mix the almond flour, baking powder, cinnamon, and salt
In a small bowl, combine egg, honey, and oil.
Add to almond flour mixture and stir till combined.
Chill dough in the fridge for 30 minutes.
Press 1-2 Tbsp dough into mini muffin pan creating a dent in the middle.
Bake for 12-14 minutes or until golden brown. DO NOT OVERBAKE!
Let cool completely before adding apple topping.
While crusts baking, combine apples, sugar, and spices. Stir, divide among crust cups.
No need to bake, as the apples will soften as they sit, however, you can place them in the oven for a few minutes if you want extra caramelization.
Store shells in an airtight container and assemble as needed.
When serving, add the new almond whipped cream for a nice garnish.
Yields 12-14 tarts
