I have shared this recipe many, many times, but some things are worth repeating! Ever find a recipe that is so good you keep going back to it over and over?  This one is IT for me!   “Jenn from Texas” is a dear friend I have known at least 20 years, though we have only met in person twice.  We met online as part of an online community for new moms, and we still chat regularly online via Facebook, e-mail, and text.    This recipe is from her, and boy is it good!  If you are looking for something easy, quick, and delicious for a holiday party,  this one might be just what you are looking for.

 Onion Souffle Party Dip

Yield:   The recipe below will fit nicely in an 8 X 8 baking dish.  Go up one whole amount on each ingredient if using a larger dish, like a 9 X 13.

1 large sweet yellow onion, chopped

1 cup mayonnaise (go with the “light” version if you want to make it healthier, like I usually do.)

1 box 8 oz cream cheese (You can use the full fat version OR use the “1/3 less fat” variety like I do).

1 cup shredded Parmesan cheese

Mix all ingredients together with a hand-held mixer.

Add more Parmesan if there is too much liquid.  Add more mayonnaise if it seems too dry.

Bake at 350 degrees for about 30 minutes or until golden brown on top.

Serve with pita chips, veggies, or “Jenn from Texas’” favorite, Fritos.

I cannot count the number of times I have been asked for this recipe! And “Jenn from Texas” will be might proud that you tried it.    ENJOY!
