From tailgates to timeouts, this bean dip is always a request when my gal-pal, Sandy, joins game time. Now that football season is here, easy dishes for those (safe) gameday gatherings is a must, and this dip is not only delish but very easy and ready in a flash. Served with your favorite tortilla or pita chips, you can’t go wrong. And, it’s simply a beautiful dish that will make everyone smile. So, are ya ready for some football????
Sandy’s Beautiful Hot Bean Dip
1 can refried beans
8 oz cream cheese, room temperature
1 cup sour cream
2 tbsp taco seasoning mix
2 garlic cloves, pressed
½ cup shredded cheddar cheese
1 medium tomato
1 small, sweet chopped onion
2 tbsp snipped fresh cilantro leaves
½ cup sliced pitted ripe olives
Chopped chives for garnish
Preheat the oven to 350°. Spread the beans over the bottom of a deep-dish baking pan. Combine the cream cheese, sour cream, taco seasoning, and garlic pressed with a garlic press and mix well. Spread the cream cheese mixture over the beans. Bake for 15 minutes or until hot. Remove the baker from the oven then top with the cheddar cheese. Return to the oven and bake an additional 2–3 minutes or until the cheddar cheese is melted.
Dice the tomato and onions. Chop the cilantro. Sprinkle the olives, tomato, onions, and cilantro over the dip. Garnish with additional sour cream and enjoy.
