On this first anniversary of Taste of Traditions, it’s only fitting that I celebrate my grandmother’s Finnish pancake recipe.
Memories of the aroma of the baking pancake throughout the house take me back to being reprimanded for licking the serving spoon—it was just that good.
Getting to put flowers on her grave last month while in Irving, and now making this treasured recipe, helps me know her memory lives on in my heart.

Panna Kakku
(Finnish Oven Pancake)
Ingredients:
- 6 tbsp butter
- 1 cup flour (You can also use GF Flour)
- 1 cup sugar
- 4 eggs
- 2 cups milk
- 1 tbsp vanilla extract
Directions:
- Preheat the oven to 350°F.
- Melt the butter in a 9 x 13-inch pan. The butter should be sizzling when you take it out.
- Mix the other ingredients vigorously until very frothy. (I used a hand mixer on high for 3 to 4 minutes.)
- Pour the batter into your pan with the melted butter.
- Bake for 40 minutes. Serve and eat immediately with pure maple syrup.
Note: The top will be browned, and the center will be quite moist.
