Recipe for Texas Caviar

1 can black beans, drained and rinsed
1 can Black Eyed Peas, drained and rinsed
1/2 red onion, chopped
1 green bell pepper, chopped
1 bunch green onion, chopped
1 tbsp minced garlic
1 pt cherry tomatoes, quartered
2 jalapenos, chopped
1/2 tsp coriander
1 – 8 ounce bottle, zesty Italian dressing
One bunch chopped fresh cilantro


In a large bowl mix together all ingredients except cilantro. Cover and chill in refrigerator about 2 hours. Toss with desired amount of fresh cilantro to serve.

Note: I don’t usually use the whole bottle of dressing. Add to taste.
