It’s almost here! We’re so close to the day we enjoy everyone around the table. This time of year brings out those southern casseroles, but for sure this one is THE BEST. This side is truly a beautiful masterpiece of layers. There are hundreds of squash casserole recipes for sure, but this one is certainly hitting my table this holiday season.

Easy Summer Squash Casserole
2 pounds squash (thickly sliced, 7 cups)
1/2 cup chopped onion
10.75 ounces cream of chicken soup
1 cup sour cream
1/4 cup butter
1/2 cup cheddar cheese
3 cups herb seasoned stuffing mix
Salt and pepper to taste
Cook squash with onion in boiling salted water for 10 minutes. Drain well. Combine soup, sour cream and cheese in another bowl. Fold in drained squash and onion. Melt butter and mix with stuffing mix, Layer 3/4 of your stuffing mixture on bottom of a greased baking dish then add your squash mixture. Top with the remaining stuffing mixture. Bake at 350° until heated through, 35-40 minutes.
