Leave it to me and Sandy Williams to once again find reasons to celebrate every season with a specialty cocktail.  Today’s cocktail celebrates the 4th of July with ingredients typically in your refrigerator and bar. The sweet watermelon with the smooth gin makes this cocktail VERY easy to enjoy not just at holiday time, but anytime you need to beat the heat with a cool and refreshing drink.

Watermelon Gin Cocktail


2 cups cubed seedless watermelon
8 ounces of your favorite gin
1 1/2 ounces lime juice
1 tablespoon simple syrup or maple syrup
1 cup ice



Puree the watermelon in a blender.  Hold out a couple of cut watermelon for garnish.  If you use seeded watermelon, make sure you strain the puree.  Add the remaining ingredients into a cocktail shaker with your ice and shake until desired.    Place the sugar on the rim and garnish with remaining cut melon.  For a pretty final topper, add fresh mint.
