Looking to get a little more healthy this year? You can’t go wrong with my new “go-to” side.  A filling side or a meal as a whole, this easy and delicious recipe will have you asking for more.  It is great with grilled salmon, scallops or chicken.  Make it your ‘go-to” this year!



Wild Rice with Spinach and Pistachios







Bring 2 cups of chicken stock to a boil in a medium saucepot over high heat. Add the rice, cover and reduce the heat to low. Simmer for 35– 45 minutes, or until all the water has been absorbed and the rice is tender.


In a sauté pan, Add the olive oil, minced garlic and cook for two minutes. Add spinach and toss to combine. Cover the sauté pan to allow the spinach to wilt.


Once your spinach has wilted, add the cooked wild rice to combine.  For the final step, stir in the dill, pistachios and cranberries.  Season with salt and pepper. Top with parsley.  Enjoy.
