With all the heaviness of the comfort and game day foods, isn’t is nice to just go to the grocery produce and find ways to create lighter and more healthier meals? Even in the winter you can find some tasty combo’s to make a delicious farm fresh salad. For my family, this is one of our favorites – both in the winter and summer. You will LOVE!
Winter Farm Fresh Salad
A handful of walnuts
Fresh (non-flavored) goat cheese
Beets (canned and drained are perfect)
Cooked corn off the cob
Sliced Green apples
Combine all this in a huge bowl and use my favorite balsamic vinegar – Cranberry Pear.
