Well now, what would February be without a little chocolate?  Whether it is the “Month of Love” or you just wanna share with someone your own personal love of chocolate, these muffins are some of the best I have ever made – AND they are gluten free.  But, the best thing is they can be created with a little help with a pre-made muffin mix that, honestly, doesn’t taste like gluten free at all.  I promise you, a couple of shopping items in your cart and a little creativity will make someone very happy!  And if not, eat them all yourself!  Absolutely decadent!

 

Muffin Ingredients

One box Gluten Free Muffin Mix
3 Eggs
1 C Milk
6Tbs Butter
1Pkg Godiva Dark Chocolate Pudding Mix
1/2 Coconut
1 C Almonds (Sliced)
1/2 tsp coconut flavoring (do not skimp on the quality of the flavoring)

 

Glaze Topping

1/2 C Coconut
1/4 C Almonds (Sliced)
1/2 tsp coconut flavoring (do not skimp on the quality of the flavoring)
1C Confectioners Sugar
1 1/2 Tbs of Cocoa
A little bit of water

 

Preheat your oven to 375 degrees. Combine all the muffin ingredients together except the almonds.  While you are combining, carefully toast the almonds in a pan.  This will bring out the oils in the almonds and make it so yummy.  Cool the almonds, then gently fold into muffin batter.  Bake for about 18 minutes or until the middle is firm.  Careful not to overcook.

 

While you’re baking, create your glaze by combining your confectioners sugar, cocoa and flavoring.  Add just enough water to create the drizzle.  Toast your remaining almonds carefully in a pan.  Let cool.

 

Once your muffins are cooled on a cooling rack, drizzle your glaze and top of each muffin and top with coconut and toasted almonds.
