There are those meals you have you always remember, but rarely is it a soup that’s so memorable, right? But, for me, the Onion Bisque Soup from The Capitol Grille at The Hermitage Hotel in Nashville is probably the most decadent soup I have ever tasted. This is the perfect soup for both entertaining and every day. Being it is National Homemade Soup Day, I had to include his modified version of this rich, creamy soup to delight your taste buds. I hope you love this as much as I do. Don’t forget the toppings! Bacon and chives are my favorites.
Ingredients
6 sweet onions, medium diced large
3 Tbsp. whole butter
1 Tbsp. Olive Oil
2 Garlic Cloves
3/4 cup half & half cream (You can also use
salt and white pepper
Toppings
as desired, smoked bacon
as desired, chives
as desired, Brie grilled cheese sandwich
Directions:
Simmer onions in butter and olive oil over very low heat for three hours. Place onions in a blender and puree until smooth; add cream the slowly heat on the stove until bubbly and warm. Season with salt and white pepper.
If desired, garnish bowl with smoked bacon, chives and triangles of Brie grilled cheese sandwich.
