Sweet and Spicy 6 Chili Sauce

Ingredients:
6 whole chilies such as Jalapeño, Dutch, Thai, Fresno, Santa Fe, Anaheim (look for multi variety packages in the produce area)*
1 tomato, roughly chopped**
1 small carrot, peeled and roughly chopped
1 whole green onion, roughly chopped
1 clove of fresh garlic
1 tsp. ground cumin
Juice of 1 lime
1/4C extra virgin olive oil
2 Tbs. honey
1/4 bunch fresh cilantro, washed
Kosher or sea salt to taste

*for less heat remove some of the seeds and ribs from inside the chilies
**roughly chopped means chopped enough to fit in your food processor or blender

Preparation:
Place all ingredients except the cilantro in a food processor or blender. Process until smooth. Then add the cilantro and process till just combined. Taste and add salt as needed.

Place in a covered, non-reactive container and refrigerate for up to one week.
